We sell peppers four different ways: fresh (when available), dried, powdered and as seeds. When ordering fresh peppers please contact us first to verify availability. Fresh peppers are normally available during the summer growing season (July through September).

Ají Amarillo
This largish (average 2-3 inches long), fleshy pepper is bright orange when ripe. They're very mild (around 500 Scoville--about the same as an anaheim pepper), with a lot of "meat" to it. Flavor is relaxed and mild--very good for sauteeing and substituting for bells and anaheims or jalapeños (when the jalapeño's heat isn't wanted). It's also an excellent salsa chili.

Ají Colorado
Small and slender (average 1 inch long), dark red when ripe, it resembles japanese reds and thai-hots. These are hotter than the ají amarillo--rating around 15,000 Scoville--but that's far milder than japanese reds or thai-hots. Flavor is strong, dark and pungent. It's very good used in small amounts to flavor exotic dishes.

Chinchi uchu
Yellow when ripe, and about the size of a human testicle. This bad boy is a capsicum chinense, as are habaneros. Like habaneros, chinchi uchus are little fireballs, measuring around 100,000 Scoville units. Unlike habaneros, which tend have a dark, smoky flavor, chinchi uchus are lighter and fruitier. They're wonderful for hot salsas or as a little garnish to wake up a mild dish.

Rocoto
Dark red when ripe, averages an inch in diameter. This guy is arguably our most unusual pepper--he comes from the southern Andes in Peru. Big, fleshy, with black seeds inside--he's a capsicum pubescens,, which means the plant's leaves are "hairy." The leaves burn with too much sun, but ours seem to be okay at our Southern California farm. It's fairly hot (around 70,000 Scoville units--equivalent to a serrano chili).
